Dr. Rouaa Daou holds a Ph.D. in Life Sciences from the Saint-Joseph University of Beirut, Lebanon, a Ph.D. in Public Health from the Lebanese University. She also holds a M.S. degree in Food Technology and a B.S. degree in Nutrition and Dietetics from the American University of Beirut. Her Ph.D. studies concentrated on quantifying the concentrations of aflatoxin B1, aflatoxin M1, and ochratoxin A in a selected Lebanese food basket including milk and dairy products, wheat and derived products, spices, herbs, nuts, etc. Her work also included quantifying the exposure to those mycotoxins in the Lebanese population and their related health risks. Currently, Dr. Daou is a part-time instructor at the Saint Joseph University and Notre Dame University-Louaize. She is also mentors M.S. students in research studies in the areas of food mycology and public health at the two universities. Dr. Daou is also an active researcher at the Laboratory of Mycology and Food Safety (Saint Joseph University), where her current research projects concentrate on the rate of carry-over of mycotoxins in food production including the production of cheese and bread, the safety of moldy jams, and the quantification of biomarkers of mycotoxins in Lebanese children. Dr. Daou has different national and international conference participations including the Dubai International Food Safety Conference (DIFSC). Dr. Daou has published several articles in prestigious scientific journals including review and research articles on food contamination with myctoxins.
